Coconut Rendang Rice Bowl — Ten Minutes, Zero Compromise
Rich, coconutty, and slow-cooked to fall-apart tender — this bowl takes the deep, caramelised flavour of Not Your Makcik's Rendang and lets it shine with nothing more than rice, pickles, and a squeeze of lime-fresh crunch.
Ingredients
- 1 pack (about 2 cups) Not Your Makcik's Rendang
- 2 cups steamed jasmine rice
- 1/2 cup coconut milk, warmed
- 1/2 Lebanese cucumber, sliced
- Pickled shallots or achar, to taste
- Fresh coriander and sliced red chilli, to serve
- Crispy fried shallots
Method
- Steam or microwave the rice until hot and fluffy; divide between two bowls.
- Warm the Not Your Makcik's Rendang gently in a saucepan over low heat, stirring in the warmed coconut milk to loosen the sauce into a rich, glossy coating.
- Spoon the rendang generously over the rice.
- Arrange sliced cucumber and pickled shallots alongside for contrast and crunch.
- Finish with coriander, sliced chilli, and a scattering of crispy fried shallots.
